Creamy Spinach Quiche

Serves 6-8

1 partially baked tart pastry
4 eggs
2 c light cream
1/2 t salt
1/8 t nutmeg
pinch of cayenne pepper
2 T minced onion
1 T butter
1 T fresh marjoram, chopped
1 1/4 c grated swiss cheese
1/2 c cream cheese, cut in small pieces
1 c cooked chopped spinach, well drained

Preheat oven to 425 degrees. Saute onions and marjoram in butter. Let cool. Combine eggs, cream, salt, nutmeg and pepper in a mixer bowl and beat to mix thoroughly. Combine cheeses, onion and spinach, and place in botom of pastry. Ladle custard over the top.

Bake 15 minutes at 425 degrees, then lower heat to 350 degrees and bake 30 minutes more, or until a knife inserted in center comes out clean. Serve in wedges hot or cold.
